Yes, the user interface. Do you like it or do you prefer an alternate launcher like Launcher Pro, ADW, or Go? There are also different versions of sense (the one on your phone is version 1.0 and they go up to 3.0). If you like sense, look for a sense ROM (such as Nils), if you prefer pure android and adding your own launcher look into an AOSP (like Cyanogen). Once you decide between sense and AOSP you can start to whittle down your options.

Tweebee, there are ICS ROMs out there for both the DInc and the DInc2, albeit alpha or beta releases.

I use launcher pro as well, not a particular fan of sense. Sense 3.0 for me was asthetically nice but it slowed down the phone too much for my liking and didn't provide enough function to make it worthwhile. To be fair, I tried them when they were first coming out so maybe they made performance enhancements.
If you're unfamiliar with ROMs, I would give In-sensitive Minimalist a try. It's not AOSP like Cyanogen but he removes most traces of Sense (which you don't need since you're going to be using Launcher Pro anyway). He keeps just enough sense artifacts so that the ROM is stable. It's a good balance of familiarity, enhancements and performance.
But ROMs are like cars, everyone has a preference and you really won't know until you test them out.
