    From your homescreen: Menu > Settings > Language & Keyboard > *android* Keyboard Settings (second choice down) > Uncheck "Sound on Keypress"

    I'm pretty sure that doesn't apply to dialing a phone #, just entering text with the keyboard. I haven't found a way to mute the actual dialing sounds when making a call.
