You CAN disable Sense...mostly.
I installed GDE as I prefer its launcher. What I noticed though when going back to sense to mess with it is that it started sense up the first time I launched it after that.
First you have to install an alternate launcher as sense is the only one installed. So go get GDE, home++, dxtop or whatever you like and install that.
Next launch your new home replacement.
Now restart the phone.
When the phone restarts, sense will not be running anymore. It will not relaunch on its own unless you actually clear defaults and choose it as your launcher.
What this means is no access to sense widgets for the most part. It seems that HTC didn't include the artwork for vanilla Android and just straight up replaced some of the stock Android functions like messaging and the dialer in the incredible rom.
By doing this you will still have the black sense notification bar, the htc dialer, browser, keyboard, lockscreen and messaging apps. The reason being the stock Android ones aren't even included.
Anyway hope this clears some things up. I may be wrong but this is my perception of the situation. I'm running almost the exact same setup I had on my Droid. Aside from the htc kb and browser there really is no trace of sense on my phone.

I don't have any issues with Sense. I am able to turn off what I don't need ( or at least use market apps in their place) without issue. I have not tried GDE and probably wont. I actually like the integration with sense and look forward to the new upcoming widgets from their market.

I love sense as well. I don't personally see a need to disable it. All the widgets and features of Sense are nice to have.

Yup, Sense is working great. I actually started with Clean Slate and have been creating my own from there. I know that 7 screens are a lot, but I'm finding it really easy to fill when some of the widgets are a full screen. Working beautifully and taking to Android much faster than I had thought.

My main problem with sense is i cant customize the launcher and all the sense widgets would be nice if they weren't so huge. Most take up a whole screen.

Just did that about 5 minutes ago :-) I was only using 3 screens and abc folders on my Droid. I use the extra full screens for the full widgets. I know I say it all the time, but it is just a smooth ass phone. Even the photo album widget.....

Yeah, but do you really need all seven screens otherwise. I agree many are large, but then again, some are not. I can really get by with 2 main screens on my setup. That leaves my 5 screens for full widgets should I choose. Get creative. I use beautiful widgets on my main screen. Smaller BW for my weather, then surround it with a BT, Wifi, Silent and Brightness widget all beautiful widgets. I then have a couple of folders from ABC folders along with my pure calendar widget at 3x2. This fits easily on one page. Second just has all of my main extras. From there...the rest is pure freedom for what I want to do.
And dont forget about scenes. If you are worried about having different widgets for different activities set up some scenes and easily switch between them.

Yeah I might try to do a workable setup. I just really like the setup im using now. It took many hours over the last 6 months to perfect it.

What ya got? Maybe we can help. I am really going to try to make use of the scenes option myself. But otherwise, I really find way more screens than I need so I can use the large widgets. I was also wondering why so large on some of them, but it does make sense. To read emails, messages etc you need a large widget. Kind of cool to flick through messages on a screen though.

The additional screens are working out great for me for things like the full screen calendar widget. Its great to just shoot over to that screen and have the entire month laid out for you at a glance instead of having to click around. Same for the notepad app. Just little things like that.
