looking for some Info about roms

Ok so i was looking at List of ROM's for the Incredible - xda-developers and i seen all them roms, right now i have miui installed but im just woundering what the difference is between the roms.

the ones i hear about most are gingerbread and cyanagenmod but im just new to it and alls im looking for out of a rom is the one that allows me to do the most customizing.
